Title: BREAD MACHINE RECIPE-POTATO BREAD

1cStarter (stirred down)
5ozWater
2 1/2cBread flour
1tbGluten (optional)
1/2cPotato flakes
1 1/2tbDry milk
1 1/2tbSugar
1 1/2tsSalt
1 1/2tbButter
1 1/2tsRed Star fast rising yeast

My bread machine says to add the wet ingredients first, then the dry ingredients (protecting the yeast from the wet stuff), then the butter in four pieces in each corner, with the yeast in a well in the middle. I baked it on Basic, Medium crust. I think I will try it on the French Bread setting some time soon. It was very moist, kept its moistness for several days (I usually have a real problem with that!) and tasted very good. It's not real sourdough, but it's a good imitation.

I realize that to many, the words "sourdough" and "bread machine" are not synonymous, but since I work two jobs and raise teenagers, I don't feel much like spending time kneading and watching dough. I just stumbled upon a really good recipe in my bread maker (West Bend) with sourdough.
